My cousin gave me these yard-long beans from his kitchen
garden. They were so fresh I did not want to ruin them by too much cooking so I
rustled up a dish which was simple and healthy and tasty.
This is how it grows |
The Recipe
Chop up the following :
Beans into inch long pieces. Steam them just for a couple of
minutes – we want them crunchy.
Onion, garlic, green chillies, tomatoes into small pieces.
Put one teaspoon oil (olive oil or any other oil or butter)
in a pan. Lightly sauté the onions.
Add the rest of the ingredients and salt to taste. Stir till
the salt is properly mixed and the tomatoes are a little soft. Add the beans
and stir again. Twist a few drops of lemon juice.
Options
You can replace the yard-long beans with any beans or
capsicum or broccoli, or peas or cabbage or a mix of all. Instead of steaming
the vegetables you can just stir fry them with the onion and tomatoes.
